Ingredients: 2 1/2 lb tofu, 1/4 c tamari, 1/4 c sesame oil, 1 T curry powder, 1 T paprika, 1/2 t cayenne, 1/2 t fennel seeds, 1/2 T chili powder, 1/2 c celery, 1/2 red onion, 1 carrot, 1/2 bn parsley, 1/2 t salt, 1/2 t black pepper, 1 c Vegenaise

Ingredients: 3 grapefruit, 1/4 c sunflower oil, 1 T lime juice, salt, 1/2 lb fennel, 1/4 c mint leaves, 2 avocado, 1 t coriander seeds, fennel fronds
Fluffy and hearty, this salad is chock-full of fresh and flavorful ingredients. Substituting brown rice for the red rice would work fine, too.

A light fruity salad perfect for picnics, that also works well as a side dish for pork or seafood. Substitute dried apricots for the apples for a great variation.
