Ingredients: 1 1/2 lb parsnips, 4 red onions, 1/2 c olive oil, 4 fresh thyme sprigs, 2 fresh rosemary sprigs, 1 whole head garlic, salt, black pepper, 1 1/4 lb sweet potato, 30 cherry tomatoes, 2 T lemon juice, 4 T capers, 1/2 T maple syrup, 1/2 t Dijon mustard

Burdok, sweet potatoes, turnips, or other root vegetables would be good substitutes for the ones listed below. Avoid beets though, as they would turn your dish scarlet.
