This is a delicious and hearty variation of macaroni and cheese. The butternut squash lends a creaminess that cheese alone does not.
Ingredients: 2 c butternut squash, 6 c water, 2 c milk, 2 T butter, 1/2 t salt, 12 oz einkorn fusilli, 1 1/2 c cheddar cheese, 1/2 c parmesan cheese, 1/4 t paprika
This is a quick-fix and can easily be made vegan.

Ingredients: 2 lb canned diced tomatoes with juice, 1 red onion, minced, 6 clv garlic, minced, divided use, 1 T flour, 1/2 t cayenne pepper, 2 chipotle peppers, ground, 1 T olive oil, 2 c cooked brown rice, 3 c picante sauce, 2 c cooked black beans (drain if using canned beans), 2 T cumin, 1/2 T tamari, 1/2 T lime juice, 1 t ground coriander, 12 corn tortillas, 3 c cheddar cheese, grated
Ingredients: 2 leeks, 2 shallots, 2 celery ribs, 1/2 lb potatoes, 1/2 lb celeriac, 2 carrots, 2 T unsalted butter, 3 belgian endive, 1 bay leaf, 5 c stock or water, sea salt and freshly ground pepper, 1/2 c cream, to finish:, 2 T parsley, 1 T chives, 1 t tarragon, 4 sli country bread, 2 oz gruyere cheese, 2 t thyme
Ingredients: 2 clv garlic, 1/2 c butter, divided into two 1/4 pieces, 1/4 t freshly ground cardamon seeds, salt and pepper to taste, 1 lb dry curd cottage cheese or farmer's cheese, 2 lb collard greens, stems discarded, leaves chopped, 1/2 c water, 1/2 t cayenne, 1 t freshly ground black pepper, 1 t crushed garlic, 3 T coarsely chopped yellow onion, salt to taste, optional
This pasta dish with caramelized onions and lots of garlic is a lovely way to use beets and beet greens. Use gold beets, or you’ll end up with pink pasta!
