A lemony vinaigrette gives roasted parsnips, onions, and sweet potatoes a welcome brightness and freshness.
Ingredients: 1 1/2 lb parsnips, 4 red onions, 1/2 c olive oil, 4 fresh thyme sprigs, 2 fresh rosemary sprigs, 1 whole head garlic, salt, black pepper, 1 1/4 lb sweet potato, 30 cherry tomatoes, 2 T lemon juice, 4 T capers, 1/2 T maple syrup, 1/2 t Dijon mustard
Ingredients: 5 large avocados, peeled, stoned and diced, 8 clv garlic, minced, 1 onion or 4 scallions, chopped fine, 2 tomatoes, chopped, 1 bn cilantro, chopped (save 1 sprig for garnish), 4 T lemon juice, 1/4 t cumin, 1/4 t spike® (the secret ingredient), 2 shakes of tamari, 1 shake of cayenne
Burdok, sweet potatoes, turnips, or other root vegetables would be good substitutes for the ones listed below. Avoid beets though, as they would turn your dish scarlet.
Ingredients: 1/2 lb carrots, 1/2 lb parsnips, 1/2 lb rutabaga, 1/2 lb salsify, 3 T butter, 1/4 c sage, 1 1/4 t salt, black pepper, 1 T maple syrup, 2 t lemon juice

Ingredients: 1 large rutabaga, 1 lb turnips, 1 sweet potato, 1/4 t cayenne pepper, 1/8 t nutmeg, 1/2 c milk, 1 T butter, 3 T minced fresh parsley or chives
Ingredients: 1 t oil, 1 t tomato sauce, 1 t sherry, 1/2 t fresh ginger, 1 carrot, 2 T sweet pickle, 1 t vinegar, 3 t brown sugar, 2 t cornstarch, 1/2 c cold water
Nutty toasted pecans are a nice complement to Brussels sprouts.
Ingredients: 1/4 c pecans, salt, 1 1/2 lb Brussels sprouts, 4 T butter, 1 T olive oil, 1 onion, 2 clv garlic, black pepper
Radishes get special treatment here: sautéed with snap peas and butter, then glazed with orange juice and dill! Yum.
Ingredients: 1 T butter, 1/2 c shallots, 12 oz sugar snap peas, 2 c radishes, 1/4 c orange juice, 1/2 t dill seeds, 1 T dill
