This salad is spring in a bowl! On its own, it's a perfect dinner for one, and would also serve two to three as a side.
Ingredients: 3 T white wine vinegar, 1 t Dijon mustard, 1 shallot, salt, black pepper, 1/2 c olive oil, 4 sli bacon, 1 bn ramps, 3 c baby spinach, 1 c dandelion greens, 1/2 c jerusalem artichokes, 1/4 c feta cheese, violet petals
Ingredients: 1 T oil, 1 T butter, 1 bn ramps, 1/4 c carrots, 1/4 c black radish, 1/2 c mushrooms, 1/2 c vegetable broth, 2 T dry sherry, 1/4 c heavy cream, 2 c spinach, 1/2 c kale
