Plum Granita

This intensely flavored granita is infused with red wine, cloves, and peppercorns for a summertime treat that’s unusual and unexpected.

  • 1/2 c red wine
  • 1 clove
  • 2 black peppercorns
  • 1 t vanilla extract
  • 1/3 sugar
  • 2 lb plums
  • 1 T honey

Plum Granita Directions

  1. In a medium saucepan over medium heat, combine the red wine, clove, peppercorns, vanilla, and sugar. Bring to a boil, then reduce the heat and simmer for 5 minutes. Remove from heat and pour through a mesh strainer into a bowl. Set aside to cool.
  2. Place the plums, honey or agave, and chilled wine syrup in a blender. Blend until smooth, then refrigerate for 2 hours, or up to overnight.
  3. Place a 9x11 baking dish in the freezer.
  4. Use an immersion blender to blend the plum and wine mixture for 30 seconds. Transfer to the chilled baking dish and return to the freezer. For best results, use a timer and set it for 30 minutes. After 30 minutes, use a fork to scrape the ice crystals that have formed in the baking dish from the outside towards the center. Return the dish to the freezer and set the timer for another 30 minutes. Continue to scrape the mixture with a fork every 30 minutes until the mixture is a uniform frozen consistency of flaky crystals, but not frozen solid (see note). Scoop into bowls and serve.
