Broccoli Rubble

A fast and yummy dish to make with simple pantry ingredients, and a great reason to keep frozen broccoli on hand.

  • 4 c broccoli florets and stems
  • 2 T olive oil
  • 1 onion
  • 3 clv garlic
  • 3 c cooked rice
  • salt
  • pepper

Broccoli Rubble Directions

  1. Place the broccoli over a pot of simmering water and cover to steam. Cook until very tender but still bright green. Transfer to a cutting board and coarsely chop. Set aside.Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and cook, stirring, until golden and tender, 5-8 minutes. Add the chopped broccoli and fold in the cooked rice. Add a generous pinch of salt and some black pepper. Cook, stirring, until heated through. Sereve hot.
