Mascarpone cheese and Meyer lemons are made for each other - both are mild and barely sweet, with a bit of tang. Together they make a rich and silky sauce that’s still light.
Ingredients: 1 meyer lemon, 1/2 c mascarpone cheese, 1/2 t salt, fresh pepper, 1/4 t nutmeg, 1/2 lb spaghetti, 5 c loosely packed spinach, 1/2 c chopped, toasted hazelnuts
Zucchini is stuffed with za’atar-seasoned lamb and summer vegetables, then baked and served with creamy garlic yogurt.
Ingredients: 2 c plain Greek-style yogurt, 2 clv garlic, salt, 4 zucchini, 1 T sunflower oil, 1/2 lb lamb skirt steak, 1 T sherry vinegar, 2 T olive oil, 1 onion, 1 red pepper, 1 poblano pepper, 2 T za'atar, 2 tomatoes, 1 ear of corn, 1 c cooked brown rice, 1/2 c grated Asiago cheese
Ingredients: 1 egg, 1 medium onion, finely diced, 2 clv garlic, minced, 2 T minced fresh parsley, 1/2 c rolled oats, 1 T chili powder, or the spice mix of your choice, salt and pepper to taste, 2 c well-cooked black beans, broth reserved, or 1-14oz can, rinsed and drained, extra virgin olive oil, canola, corn or grapeseed oil, bean cooking liquid, stock or water, see note below
