Here's a flavorful Mediterranean-inspired dish from the Willy Street Co-op's deli.
Ingredients: 1 1/2 c water, 1 1/2 c whole milk, 1 c polenta, 1 1/2 t minced garlic, 1 t salt, 1/2 t dried oregano, 1/2 t dried basil, 1 T olive oil, 1 bn spinach, 1/3 c julienned red onion, 1/3 c kalamata olives, 1/3 c sun-dried tomatoes, 2 T crumbled goat cheese, 1/3 c crumbled feta, 1/3 c shredded mozzarella
Subtly spicy mizuna contrasts with crispy snow peas and savory, marinated tempeh in this meal-sized salad. Mizuna is related to mustard greens, but has much milder flavor.
Ingredients: 2 T apple cider vinegar, 2 T soy sauce, 2 T water, 1 t grated ginger, 1 t sesame oil, 8 oz tempeh, 2 T miso, 1 T Dijon mustard, 1/4 c olive oil, 3 T lemon juice, 1 clv garlic, 1 T maple syrup, 2 t coconut oil, 6 oz snow peas, 2 c red cabbage, 1 carrot, 2 c mizuna, 2 green onions, 1/4 c cilantro
Ingredients: 8 oz Greek yogurt, 1/2 c whipping cream, 4 T honey, 1/4 c pistachios, 1/4 c pomegranate seeds

Ingredients: 2 onions, 2 T olive oil, 1 t salt, 1/2 t black pepper, 1 apple, 2 T balsamic vinegar, 1 c vegan mayonnaise, 1/2 c non-dairy cream cheese
Ingredients: 2 1/2 lb fresh asparagus, 3 T sunflower or canola oil, 1 onion, chopped, 1 stalk celery, chopped, 5 c vegetable stock or water, 2 T soy sauce or tamari, 1/4 c long grain rice, salt and pepper to taste, 1 1/4 c milk or soymilk, fresh parsley, chopped or almond flakes (for garnish)
