This jam adds depth of flavor wherever it’s used: layer on pizza instead of tomato sauce, spread on a sandwich, or serve with cheese and crackers.

Ingredients
- 2 T butter
- 2 T olive oil
- 4 onions
- 2 T thyme leaves
- 1 bay leaf
- 1 clv garlic
- salt
- black pepper
- 0.25 c apple cider vinegar
- 2 T brown sugar
Preparation
In a large, heavy pot, melt the butter and olive oil over medium-low heat. Add the onions, thyme, bay leaf, smashed garlic, 1 teaspoon of salt, and a sprinkle of black pepper. Cover and cook, stirring occasionally, for 20 minutes. Add the vinegar and sugar, and cook, stirring frequently, until thickened, at least 20 more minutes. Remove the bay leaf.
Transfer the jam to a bowl and let cool. Taste, and add more salt and pepper if needed. Store refrigerated in a tightly covered container for a few days. Bring to room temperature before serving.
