Almost effortless to prepare, but gratifying. Lime and scallions make unlikely companions for squash, but it works. Lime juice tempers the sweetness of the squash, while scallions lend a savory touch. A nice diversion from more traditional squash recipes.

Ingredients
- 1 small acorn squash, halved and deseeded
- 2 t fresh lime juice
- 1 T olive oil
- 1 scallion, chopped
Preparation
Preheat oven to 350ºF. Place squash halves on a steamer rack in a saucepan of boiling water. Cover tightly with foil and bake for 15 minutes or until tender. In a small bowl, whisk together freshly squeezed lime juice, oil and salt and pepper to taste. Drizzle over hot squash halves and serve.
