Awesomely tasty greens with a kick.

Serving: 4 Servings

Ingredients

  • 3 sli bacon
  • 1 onion
  • olive oil
  • 2 clv garlic
  • 1 lb collard greens
  • 3 c chicken broth
  • 1 t salt
  • 1 t pepper
  • 1 pn red pepper flakes

Preparation

In a large pot with a lid, cook bacon over medium-high heat until crispy. Remove from the pot and crumble, then return to the pot. Add onion and cook in bacon fat. Add a bit of olive oil if needed. Cook onions until tender, about 4-5 minutes. Add garlic and cook until fragrant. Add the collard greens and cook, stirring occasionally, until they begin to wilt. Pour in the chicken broth and season with salt, pepper, and red pepper flakes. Reduce heat to low and simmer, covered, for 45 minuted, or until the greens are very tender.
