Sweet springtime bread with the zingy flavor of rhubarb and the sweetness of brown sugar.

Ingredients
- 2 1/2 cup all-purpose flour
- 2/3 cup oil
- 1 tablespoon vanilla
- 1 teaspoon baking soda
- 1 1/2 cup rhubarb
- 1 tablespoon butter
- 3/4 cup brown sugar
- 1 egg
- 1 cup buttermilk
- 1 teaspoon salt
- 1/2 cup sugar
Preparation
- Preheat oven to 325. Grease 2 loaf pans.
- Mix milk, brown sugar, oil, egg and vanilla in a medium bowl.
- In a small bowl, mix the flour, baking soda and salt.
- Combine the dry ingredients with the wet and mix. Add rhubarb and mix. Pour into pans.
- Blend sugar and butter and sprinkle on top of the batter.
- Bake for 50 minutes or until the knife inserted comes out clean.
- Allow to cool for 10 minutes before removing from pans.
