Sweet springtime bread with the zingy flavor of rhubarb and the sweetness of brown sugar.

Time: 1 hour 30 minutes

Ingredients

  • 2 1/2 cup all-purpose flour
  • 2/3 cup oil
  • 1 tablespoon vanilla
  • 1 teaspoon baking soda
  • 1 1/2 cup rhubarb
  • 1 tablespoon butter
  • 3/4 cup brown sugar
  • 1 egg
  • 1 cup buttermilk
  • 1 teaspoon salt
  • 1/2 cup sugar

Preparation

  1. Preheat oven to 325. Grease 2 loaf pans.
  2. Mix milk, brown sugar, oil, egg and vanilla in a medium bowl.
  3. In a small bowl, mix the flour, baking soda and salt.
  4. Combine the dry ingredients with the wet and mix. Add rhubarb and mix. Pour into pans.
  5. Blend sugar and butter and sprinkle on top of the batter.
  6. Bake for 50 minutes or until the knife inserted comes out clean.
  7. Allow to cool for 10 minutes before removing from pans.
