Sautéing ramps with shallots is a great treatment for these yummy harbingers of spring.

Ingredients
- 2 tablespoons butter
- 1 shallot
- 1 bunch ramps
- salt
- 1/4 baguette
Preparation
- Melt a tablespoon of butter in a medium skillet over medium heat. Sauté the shallots until soft and lightly golden. Add the second tablespoon of butter and the ramps. Sautée until stalks are soft, 1-2 minutes.
- Toast the baguette and top with the sautéed shallots and ramps. Serve while still warm.
