Sautéing ramps with shallots is a great treatment for these yummy harbingers of spring.

Ingredients

  • 2 tablespoons butter
  • 1 shallot
  • 1 bunch ramps
  • salt
  • 1/4 baguette

Preparation

  1. Melt a tablespoon of butter in a medium skillet over medium heat. Sauté the shallots until soft and lightly golden. Add the second tablespoon of butter and the ramps. Sautée until stalks are soft, 1-2 minutes.
  2. Toast the baguette and top with the sautéed shallots and ramps. Serve while still warm.
