These muffins have pumpkin butter to thank for their spicy autumnal flavor.

Ingredients

  • 1.75 c flour
  • 0.333333 c brown sugar
  • 2 t baking powder
  • 1 t cinnamon
  • 0.25 t nutmeg
  • 0.25 t salt
  • 1 egg
  • 0.25 c vegetable oil
  • 0.75 c pumpkin butter

Preparation

Preheat oven to 375˚F. Grease a muffin tin (for 12 muffins), or line with baking cups. Set aside.

In a large mixing bowl, combine the flour, brown sugar, baking powder, cinnamon, nutmeg, and salt. In a separate bowl, whisk together the milk, egg, vegetable oil or applesauce, and pumpkin butter. Fold the wet ingredients into the dry ingredients, just until combined. Fill the muffin tins with batter, about 2 tablespoons each. Bake for 15-20 minutes, until a toothpick insered into one of the muffins comes out clean.
