Rich and creamy duck eggs are higher in protein and fat than chicken eggs. A simple scramble highlights their flavor.

Ingredients

  • 2 T butter
  • 2 duck eggs
  • salt
  • black pepper
  • 2 t minced fresh parsley

Preparation

Heat a cast iron skillet over medium heat. Melt 1 tablespoon of the butter and add the egg. Cook, occasionally gently stirring, for 2 minutes. Transfer to a warm plate and top with the remaining butter. Sprinkle with a pinch of salt and pepper and the minced parsley. Enjoy immediately.
