Souvlaki are Greek skewered meats, steeped in a lemon and herb marinade for a spicy flavor. In this version, red bell peppers add color and more flavor. Keep this recipe handy when you need a quick summer meal on the grill.
Ingredients
- 3 cloves garlic, minced
- 3 tablespoons minced fresh parsley
- 1 tablespoon dried oregano
- 1/2 teaspoon red pepper flakes
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 3 tablespoons extra virgin olive oil
- 3 tablespoons lemon juice
- 1 pound boneless chicken thighs
- 1 large red bell pepper
- 4 large skewers
Preparation
- In a large bowl, mix garlic, parsley, oregano, pepper flakes, cumin and salt. Stir in olive oil and lemon juice. Cube the chicken and the pepper, add to the marinade and stir to coat. Refrigerate for 2 hours.
- Skewer, alternating the chicken and peppers, shaking off the excess marinade.
- Grill over high heat for about 5 minutes per side, or until the chicken is browned and reaches 160 F in the center of a piece of meat; remove from the grill and serve.
Serving Suggestion
Pair these skewers with a classic Greek salad and lemony rice or garlicky pita bread.
