Cornbread is even better when it’s blue.

Ingredients

  • 1 c blue corn meal
  • 1 c all-purpose flour
  • 0.25 c sugar
  • 1 T baking powder
  • 1 t salt
  • 1 c milk
  • 0.333333 c vegetable oil
  • 1 egg

Preparation

Preheat the oven to 400˚F. Grease an 8×8″ pan.
Combine dry ingredients in one bowl. Combine wet ingredients in another bowl.
Pour wet ingredients into dry and mix until just combined. Don’t over mix!
Pour the batter into the prepared pan, and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Remove from oven and serve warm!
