Solve your weeknight mealtime crunch with this quick, crave-able soup. Keep frozen dumplings and boxed stock on hand, and you can make this in minutes. You can buy pre-shredded slaw mix to save even more time.

Ingredients

  • 4 cups vegetable or chicken stock
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger, grated
  • 2 cups shredded cabbage
  • 1 large carrot, thinly sliced
  • 2 10-ounce packages frozen dumplings (wontons, potstickers or gyoza)
  • 1 tablespoon dark sesame oil
  • 2 large scallions, slivered
  • Sriracha, to taste

Preparation

  1. In a large pot, add the stock, soy sauce and ginger and place over medium-high heat.
  2. When the stock comes to a boil, stir in the cabbage and carrots and cook for 3 minutes.
  3. Gently stir in the frozen dumplings and sesame oil and then simmer for about 5 minutes, or until cooked through.
  4. Serve topped with scallions and a spoonful of sriracha.

Serving Suggestion

This recipe is flexible! Feel free to use bok choy instead of cabbage, or add a cooked protein or mushrooms.
