Solve your weeknight mealtime crunch with this quick, crave-able soup. Keep frozen dumplings and boxed stock on hand, and you can make this in minutes. You can buy pre-shredded slaw mix to save even more time.
Ingredients
- 4 cups vegetable or chicken stock
- 1 tablespoon soy sauce
- 1 tablespoon fresh ginger, grated
- 2 cups shredded cabbage
- 1 large carrot, thinly sliced
- 2 10-ounce packages frozen dumplings (wontons, potstickers or gyoza)
- 1 tablespoon dark sesame oil
- 2 large scallions, slivered
- Sriracha, to taste
Preparation
- In a large pot, add the stock, soy sauce and ginger and place over medium-high heat.
- When the stock comes to a boil, stir in the cabbage and carrots and cook for 3 minutes.
- Gently stir in the frozen dumplings and sesame oil and then simmer for about 5 minutes, or until cooked through.
- Serve topped with scallions and a spoonful of sriracha.
Serving Suggestion
This recipe is flexible! Feel free to use bok choy instead of cabbage, or add a cooked protein or mushrooms.
