Aronia berries give these cookies a tart, blueberry flavor.

Ingredients

  • 0.5 c butter
  • 1 c brown sugar
  • 1 egg
  • 1 t vanilla extract
  • 1.5 c rolled oats
  • 1 c flour
  • 1.5 t cinnamon
  • 0.25 t salt
  • 0.5 t baking powder
  • 0.25 t baking soda
  • 1 c aronia berries

Preparation

Preheat oven to 350˚F. Lightly grease a baking sheet.

In a large mixing bowl, cream the butter and brown sugar. Beat in the egg and vanilla extract. In a separate bowl, mix together the oats, flour, cinnamon, salt, baking soda, and baking powder. Add the oat mixture to the butter mixture and stir just until incorporated. Fold in the aronia berries.

Drop by heaping teaspoonful onto the prepared baking sheet. Bake for 12-14 minutes, until golden-brown. Cool on a wire rack for 5-10 minutes.
