Craving apple pie, but no time for baking? Try this quick and easy oatmeal to satisfy that craving in a hearty breakfast. The cinnamon-laced apples only take five minutes and can be sauteed in coconut oil or ghee for a buttery taste.
Ingredients
- 2 tablespoons coconut oil
- 2 apples, peeled and chopped (Pink Lady, Braeburn, Fuji or other sweet apple)
- 2 teaspoons cinnamon
- 2 tablespoons water
- 1/2 teaspoon vanilla
- 1 cup water
- 1 cup old-fashioned rolled oats
- 1/4 cup almond or other milk
Preparation
- In a 2-quart pot, warm the coconut oil over medium-high heat and add the apples. Stir for a minute, then sprinkle with cinnamon, stirring to coat, then stir in water and vanilla. Reduce to medium and cook for 5 minutes, stirring occasionally. When the apples are tender, scrape into a bowl.
- In the same pan, pour the water and stir in the oats and almond milk. Raise the heat to medium-high to bring to a boil, then reduce to simmer. Cover the pan and cook for 10 minutes, stirring occasionally.
- Pour the oats into two bowls and top with the apples.
Serving Suggestion
Top with walnuts, maple syrup, almond butter or yogurt. Want to save time? Double the recipe and warm up a bowl each morning.
