Sure to please vegetarians and omnivores alike, these hearty burgers are easy to make and are so satisfying, with sharp cheese and just a touch of heat. If you’ve cooked the wild rice ahead of time, this recipe comes together very quickly.

Ingredients

  • 0.5 c wild rice
  • coarse salt
  • 2 T olive oil
  • 0.333333 c finely diced onion
  • 0.333333 c finely diced celery
  • 1 clv garlic
  • 0.5 c bread crumbs
  • 0.25 c Asiago cheese
  • 0.5 t oregano
  • 0.5 t thyme
  • 0.25 t paprika
  • 0.125 t cayenne
  • black pepper
  • 2 eggs

Preparation

Bring a large pot of water to a boil. Add a generous pinch of salt and the wild rice. Cook 45 minutes to 1 hour, until the rice is chewy and tender, adding additional hot water if needed for the rice to remain submerged. Drain the rice and set aside.

In a skillet over medium-low heat, heat 1 tablespoon of the olive oil. Sauté the onions, celery, and garlic until the onion is translucent. Transfer to a large mixing bowl. Add the wild rice, breadcrumbs, cheese, 1/2 teaspoon of salt, oregano, thyme, paprika, cayenne, and black pepper. Toss until well-incorporated. Set aside to cool completely. Fold in the eggs.

Divide the mixture in 4, and form into 1/2-inch thick patties. Heat the last tablespoon of oil in a skillet over medium heat. Fry 2-3 minutes on each side, until crispy and golden. Serve hot, with your favorite burger toppings.
