Honey Bee Bars are a staple at the Willy Street Co-op, and a longtime customer favorite. Now you can make them at home — this recipe couldn't be easier.

Ingredients

  • 0.666667 c peanut butter
  • 1 c honey
  • 1 t salt
  • 3 c sesame seeds
  • 1 c coconut flakes
  • 2 c sunflower seeds
  • 0.333333 c cashews

Preparation

Preheat oven to 350 F. Line a rimmed sheet pan with parchment and grease generously with butter or vegetable oil. Set aside.

In a medium mixing bowl, combine the peanut butter, honey, and salt. Mix until thoroughly combined. Add the sesame seeds, sunflower seeds, coconut, and cashews, and mix to combine. Transfer the mixture onto the prepared sheet pan, working quickly, as the mixture will thicken up rapidly. Use the back of a spoon to press it into the pan and spread into an even layer. Bake for 8-10 minutes, until evenly browned, rotating the pan halfway through the cooking time. 

Cool on a wire rack. Slice into 12 bars.
