These yummy, sweet, tangy pickles take a little bit of work over the course of a week to prepare. They do not need to be processed in boiling water, but are shelf stable and will keep for 1 year. 
Ingredients: 2 1/2 lb cucumbers, 1 T kosher salt, 2 1/2 t alum, 4 c apple cider vinegar, 1 T pickling spice, 1 c sugar
Ingredients: 2 T shallot, 3 T vegetable broth, 3 T olive oil, 1 1/2 T balsamic vinegar, 1/2 t Dijon, 1/4 t salt, black pepper, 1/2 c walnuts, 2 pears, 5 c lettuce, 4 c arugula
Ingredients: 2 bn arugula, 1 1/2 c walnuts, 3/4 c parmesan, 1 t salt, 1 clv garlic, 1/3 c olive oil

Ingredients: 1 red leaf lettuce, 1 c snow peas, 1 cucumber, 1 red pepper, 1 1/2 c bean sprouts, 2 carrots, 8 oz baked tofu, 1 T balsamic vinegar, 1 t sesame oil, 1/4 t chili paste, 1/2 c salad dressing
Reminiscent of fried rice, this quick dish is a different way to enjoy asparagus.
Ingredients: 1/2 c onions, 1 c mushrooms, 2 c asparagus, 2 t peanut oil, 2 T tamari, 2 c brown rice, 1/2 c celery, 1 red bell pepper
Delightfully green spears of fresh, tender asparagus tossed in a buttery sauce. Garnished with a chopped egg or tofu and granished with fresh chervil.
Ingredients: 2 T lemon juice, 4 T butter, salt, 8 oz asparagus, pepper, 2 eggs, 1 T chervil
