- 6 carrots
- 5 lemon thyme
- 2 t butter
- salt
- pepper
Carrot "Spaghetti" with Lemon Thyme Butter Sauce Directions
- Place a pot of water on the stove and bring to a boil.
- Using a vegetable peeler, peel thin lengthwise strands from each carrot, stopping just before you get to the core.
- Cook carrot "noodles" in the boiling water until al dente. Remove from water.
- Toss the hot noodles with the lemon thyme and butter. Season with salt and pepper. Serve and enjoy.
