Ingredients: 1 satsuma mandarin, 1 scallion, 1/4 t lime zest, salt, pepper, 2 fillets firm white fish, 1 t toasted sesame oil, 1 red chile, 1/2 c sake, 1/2 c chicken broth, 2 t minced fresh ginger, 1 clv garlic, 1 T soy sauce, 1 t butter, 1 shallot, 1 c basmati rice, 1 3/4 c chicken stock
