This flavorful and hearty side dish is a perennial favorite at the Willy Street Co-op, and is perfect for the Thanksgiving table!
Ingredients: 5 lb butternut squash, 1 1/2 lb beets, 1/4 c olive oil, 1/4 c canola oil, 2 t sea salt, 1 t black pepper, 1 1/2 lb red onions, 2 T red wine vinegar, 2 T white wine vinegar, 1 1/2 T honey, 1/2 c slivered almonds, 2 T minced chives
This easy skillet dish will use up some of summer's bounty of zucchini.
Ingredients: 2 T olive oil, 1 lb zucchini, quartered lengthwise and sliced in 1/2-inch pieces, 3 clv garlic, minced, 1/4 t dried oregano, 1 c corn kernels, fresh or frozen (defrosted), 1/2 c salsa of choice, 1/2 c shredded monterey jack cheese
Serve with some good bread for a wholesome, warming dinner.
Ingredients: 2 T olive oil, 1 T maple syrup, 1 t whole-grain mustard, 1/2 t cayenne, pn crushed red pepper flakes, 1/2 t cinnamon, 1/4 t nutmeg, salt, pepper, 1 1/2 oz Delicata squash, 1 fennel bulb, 1 bn purple kale, 3 T minced red onion
Ingredients: 1 lb rhubarb, 2 apples, 1 lemon, 3/4 c sugar, 1 cardamom pod, 2 bags earl grey tea, 4 T orange zest
Bright yellow peppers are stuffed with a wonderfully seasoned brown rice and vegetable mixture. If you’d prefer, you can substitute your favorite grain for the rice.
Ingredients: 1 c brown rice, 2 c water, 4 t cornstarch, 1/2 c vegetable broth, 4 t toasted sesame oil, 1 c diced pineapple, 4 clv garlic, 1 t crushed red pepper flakes, 1/2 c red wine vinegar, 1/2 c ketchup, 2 T agave, 1 T olive oil, 3 c shredded red cabbage, 1 c diced onion, 1 c diced green pepper, 4 yellow peppers

Ingredients: 1 c uncooked spelt, 4 c peeled and cubed butternut squash, 1/4 olive oil, 1/2 t pepper, 1 lemon, 1 c thinly sliced scalions, 1/2 c roughly chopped parsley, 1/4 c sliced almonds, 4 oz goat cheese
This salad is dressed with a dressing that’s light enough to enhance but not overpower the summertime produce.
Ingredients: 2 T lemon juice, 3 T olive oil, 1 t honey, 1 t champagne vinegar, 1 T heavy cream, salt, pepper, 1/2 red leaf lettuce head, 1/2 cantaloupe, 1/2 red onion, 6 fresh figs, 1/2 c crumbled feta cheese
Ingredients: 1 T oil, 2 c onion, 1 c carrot, 2 c celery, 1 1/2 T garlic, 2 c split peas, 8 c veggie broth, 1 t salt
